What team are you on at breakfast time, Sweet? Or salty? It doesn’t matter, because in this space there is an inspired recipe for all tastes and needs without leaving anyone out. Best of all, it is not difficult to transform your favorite sweet muffins into savory muffins either. They are basically a dough with egg and our Flour with Selecta Baking Powder will make them VERY fluffy.
You can try different types of fillings such as; the classic with ham or bacon, cheese and red paprika. You can also try a filling with cheese and sesame seeds, or just with spinach so that they are very green and healthy. Or, a filling only with cheese, tomato and oregano. You choose the filling that you like best and that fits your dietary restrictions and preferences.

BE CAREFUL HERE! The base recipe and the step by step will be the same, you just have to change the filling depending on the type of Muffin you want to eat at this moment.
Ingredients for the Muffin
They come out approx. 15 Muffins and you can divide the mixture into 2 or 3 parts to make different fillings.
- 2 eggs – 200ml. of milk (can be whole or semi-skimmed) – 1 tsp. of salt – 1 tsp. of baking soda – 100ml. of oil – 200 gr. of Selecta Flour with Baking Powder – 100 gr. of grated parmesan cheese – Mold to bake the Muffins – Parchment or baking paper, so they come out easily.
Step by Step
1.- In a bowl we are going to mix the dry ingredients. Sifted flour, salt and baking soda. We mix and reserve.
2.- Now, let’s go with the wet ingredients. In another bowl we add the 2 eggs and beat with a manual mixer. Without stopping mixing, add the oil and milk and continue beating until the ingredients are mixed. Finally, you add the grated Parmesan cheese.
3.- We add the dry ingredients to our wet mixture and stir. It should be a medium thick mixture.
4.- Preheat the oven to 180°C.
5.- Here you can divide the mixture into 2 or 3, it will depend on how many fillings you want to make. Mix all the ingredients together with the filling. The first can be cheese, seeds and chopped basil. The second of cheese, ham and paprika. Stir and divide the mixtures into muffin or cupcake molds. They should not be left full, only up to ¾ of their capacity.
6.- And that’s it! You put them in the oven for 15 to 20 minutes.
